Spaghetti all’Eoliana is a flavorful Sicilian pasta dish inspired by the bold Mediterranean ingredients of the Aeolian Islands.

The sauce combines juicy cherry tomatoes with capers, green and black olives, garlic, oregano, chili pepper, and fresh basil.

    spaghetti alleoliana recipe

In this easy recipe, the tomatoes are cooked just long enough to release their juices while still retaining some texture. The spaghetti finish cooking directly in the skillet with the sauce and a little pasta water, which helps create a glossy coating around every strand.

A final sprinkling of toasted breadcrumbs adds a delicious savory crunch. Simple, vegetarian, and ready in about 30 minutes, Spaghetti all’Eoliana is a perfect pasta dish for a summer lunch or an informal dinner with family and friends.

    Ingredients

    spaghetti alleoliana ingredients

    Prep Time: 10 Min | Cook Time: 20 Min | Servings: 4

    • 350 g (12 oz) spaghetti
    • 400 g (14 oz) cherry or grape tomatoes
    • 30 g (about 2 tablespoons) sea salt capers
    • 50 g (about ⅓ cup) pitted green olives
    • 50 g (about ⅓ cup) pitted black olives
    • 2 garlic cloves
    • 1 small fresh red chili pepper
    • 5 tablespoons extra virgin olive oil
    • 1 teaspoon dried oregano
    • 8 to 10 fresh basil leaves
    • 30 g (about ⅓ cup) coarse breadcrumbs
    • Fine salt, as needed

    How to Make Spaghetti all’Eoliana

    spaghetti all'eoliana recipe step 1

Step 1) – Place the salt-packed capers in a small bowl of cold water and leave them to soak for about 10 minutes. Rinse them thoroughly and drain well.

Cut the cherry tomatoes in half and slice the green and black olives into halves or thick rounds.

    spaghetti all'eoliana recipe step 2

Step 2) – Heat 1 tablespoon of extra virgin olive oil in a large skillet. Add the breadcrumbs and toast over medium heat for 2 to 3 minutes, stirring frequently, until golden and crisp. Transfer them to a small bowl and set aside.

    Make the Eoliana Sauce

    spaghetti all'eoliana recipe step 3

Step 3) – Pour the remaining olive oil into the same skillet. Add the peeled garlic cloves and the fresh chili pepper cut into pieces. Sauté for about 1 minute, without letting the garlic burn.

Add the drained capers, green olives, black olives and dried oregano. Cook for about 2 minutes, stirring occasionally.

    spaghetti all'eoliana recipe step 4

Step 4) – Remove the chili pepper and add the tomatoes. Cook over medium-high heat for about 5 minutes.

Press a few of the tomatoes gently with a wooden spoon to release their juices, but leave most of them intact. Finally, remove the garlic cloves. Add salt if needed and stir.

    Cook the Spaghetti

    spaghetti all'eoliana recipe step 5

Step 5) – Bring a large pot of water to a boil and salt it lightly, as the capers and olives are already quite salty. Cook the spaghetti until about 2 minutes before al dente. Reserve about 1 cup of the cooking water before draining.

    spaghetti all'eoliana recipe step 6

Step 6) – Transfer the spaghetti directly to the skillet with the sauce.

Add about ½ cup of the reserved pasta water and toss over medium-high heat for 1 to 2 minutes, until the spaghetti is al dente and coated with a glossy sauce. Add a little more pasta water only if necessary.

    spaghetti all'eoliana recipe step 7

Step 7) – Turn off the heat and add the basil leaves, torn by hand.

Divide the spaghetti among the plates and finish with the toasted breadcrumbs and, if desired, a small drizzle of extra virgin olive oil.

    Tips for Perfect Spaghetti all’Eoliana

Desalt the capers well: Soak salt-packed capers in cold water for about 10 minutes. Rinse, drain, and taste them before use.

Use less salt: Capers and olives are already very salty. Salt the pasta water lightly and adjust the seasoning only at the end.

Do not overcook the tomatoes: Cook the cherry tomatoes until they soften and release some juice. Leave a few pieces intact for a fresher texture.

Finish the pasta in the sauce: Drain the spaghetti about 2 minutes before al dente. Complete the cooking in the skillet with a little reserved pasta water.

Add the final ingredients at the right time: Stir in the basil away from the heat. Add the toasted breadcrumbs only before serving so they remain crisp.

    Variations and Substitutions

Spaghetti all’Eoliana can be prepared in several different ways, depending on the island and family tradition.

Add anchovies: Melt 2 or 3 anchovy fillets in the oil before adding the tomatoes. They will add a deeper savory flavor without making the sauce taste strongly of fish.

Use tuna: Add drained tuna near the end of cooking for a richer and more substantial version.

Try ricotta salata: Finish the pasta with a little grated ricotta salata or ricotta infornata instead of toasted breadcrumbs.

Replace the fresh chili: If fresh chili pepper is not available, use about ¼ teaspoon of red pepper flakes. Add them to the skillet with the garlic, adjusting the amount according to your preferred level of heat.

Change the olives: You can use only green or only black olives, depending on what you have available. Choose good-quality olives with a firm texture.

Use another pasta shape: Linguine, bucatini, penne, and rigatoni also work well with this sauce.

Replace fresh tomatoes: When cherry or grape tomatoes are not in season, use good-quality canned peeled tomatoes. Crush them lightly and cook the sauce a little longer.

    Storage

Spaghetti all’Eoliana is best served immediately, while the pasta is still al dente and the toasted breadcrumbs are crisp.

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Keep any extra toasted breadcrumbs in a separate container at room temperature, so they do not absorb moisture and become soft.

To reheat the pasta, place it in a skillet with a tablespoon or two of water. Warm it gently over medium-low heat, stirring often. Add fresh basil and toasted breadcrumbs only after reheating.

You can prepare the tomato, olive, and caper sauce up to 1 day in advance and store it in the refrigerator. Reheat it in a skillet while the spaghetti cooks, then finish the pasta directly in the sauce.

Freezing is not recommended because both the cooked spaghetti and fresh tomatoes can lose their texture after thawing.

    Origins of Pasta all’Eoliana

Pasta all’Eoliana takes its name from the Aeolian Islands, a volcanic archipelago of seven islands located off the northern coast of Sicily. The islands are known not only for their dramatic landscapes, but also for a simple Mediterranean cuisine based on local produce and intensely flavored ingredients.

Capers are among the most characteristic products of the archipelago, especially on the island of Salina. For generations, caper cultivation played an important role in the island’s economy, together with Malvasia wine. Salina capers are traditionally preserved in salt and are now protected by a Slow Food Presidium.

There is no single standardized recipe for Pasta all’Eoliana. Different versions use spaghetti or short pasta and may include anchovies, tuna, ricotta, or breadcrumbs. However, capers, olives, tomatoes, garlic, oregano, and extra virgin olive oil remain the ingredients most closely associated with its unmistakable Mediterranean flavor.
