- 350 g (12 oz) spaghetti
- 400 g (14 oz) cherry or grape tomatoes
- 30 g (about 2 tablespoons) sea salt capers
- 50 g (about ⅓ cup) pitted green olives
- 50 g (about ⅓ cup) pitted black olives
- 2 garlic cloves
- 1 small fresh red chili pepper
- 5 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- 8 to 10 fresh basil leaves
- 30 g (about ⅓ cup) coarse breadcrumbs
- Fine salt, as needed
How to Make Spaghetti all’Eoliana

Step 1) – Place the salt-packed capers in a small bowl of cold water and leave them to soak for about 10 minutes. Rinse them thoroughly and drain well.
Cut the cherry tomatoes in half and slice the green and black olives into halves or thick rounds.

Step 2) – Heat 1 tablespoon of extra virgin olive oil in a large skillet. Add the breadcrumbs and toast over medium heat for 2 to 3 minutes, stirring frequently, until golden and crisp. Transfer them to a small bowl and set aside.
Make the Eoliana Sauce

Step 3) – Pour the remaining olive oil into the same skillet. Add the peeled garlic cloves and the fresh chili pepper cut into pieces. Sauté for about 1 minute, without letting the garlic burn.
Add the drained capers, green olives, black olives and dried oregano. Cook for about 2 minutes, stirring occasionally.

Step 4) – Remove the chili pepper and add the tomatoes. Cook over medium-high heat for about 5 minutes.
Press a few of the tomatoes gently with a wooden spoon to release their juices, but leave most of them intact. Finally, remove the garlic cloves. Add salt if needed and stir.
Cook the Spaghetti

Step 5) – Bring a large pot of water to a boil and salt it lightly, as the capers and olives are already quite salty. Cook the spaghetti until about 2 minutes before al dente. Reserve about 1 cup of the cooking water before draining.

Step 6) – Transfer the spaghetti directly to the skillet with the sauce.
Add about ½ cup of the reserved pasta water and toss over medium-high heat for 1 to 2 minutes, until the spaghetti is al dente and coated with a glossy sauce. Add a little more pasta water only if necessary.

Step 7) – Turn off the heat and add the basil leaves, torn by hand.
Divide the spaghetti among the plates and finish with the toasted breadcrumbs and, if desired, a small drizzle of extra virgin olive oil.

Tips for Perfect Spaghetti all’Eoliana
Desalt the capers well: Soak salt-packed capers in cold water for about 10 minutes. Rinse, drain, and taste them before use.
Use less salt: Capers and olives are already very salty. Salt the pasta water lightly and adjust the seasoning only at the end.
Do not overcook the tomatoes: Cook the cherry tomatoes until they soften and release some juice. Leave a few pieces intact for a fresher texture.
Finish the pasta in the sauce: Drain the spaghetti about 2 minutes before al dente. Complete the cooking in the skillet with a little reserved pasta water.
Add the final ingredients at the right time: Stir in the basil away from the heat. Add the toasted breadcrumbs only before serving so they remain crisp.
Variations and Substitutions
Spaghetti all’Eoliana can be prepared in several different ways, depending on the island and family tradition.
Add anchovies: Melt 2 or 3 anchovy fillets in the oil before adding the tomatoes. They will add a deeper savory flavor without making the sauce taste strongly of fish.
Use tuna: Add drained tuna near the end of cooking for a richer and more substantial version.
Try ricotta salata: Finish the pasta with a little grated ricotta salata or ricotta infornata instead of toasted breadcrumbs.
Replace the fresh chili: If fresh chili pepper is not available, use about ¼ teaspoon of red pepper flakes. Add them to the skillet with the garlic, adjusting the amount according to your preferred level of heat.
