Doses for a 20 cm (8 inch) non-stick Springform Pan
- 500 g (2 cup) of mascarpone cheese, at room temperature. You can even make mascarpone cheese at home using our recipe.
- 150 g (¾ cup) of granulated sugar
- 120 g (~¾ cup) of "00" flour
- 3 medium eggs, at room temperature
- 300 g (10 oz) of ripe strawberries
- 1 orange or lemon zest
- powdered sugar for decoration
Kitchen Tools and Equipment
Due to the simplicity of the recipe, there is no need for the use of any specific tools.
- Anyway, you will definitely need a large bowl and a hand electric whisk or an electric stand mixer to optimally whip the eggs with sugar.
- If you want to flavor the strawberry mascarpone cake with some lemon/orange zest, you will need a good citrus grater.
- Finally, better if you have a non-stick springform pan with removable bottom for conveniently unmolding the cake.
Instructions
Step 1) - Place the mascarpone in a bowl. Mix it with a spatula to soften it a little. Then add the sugar.
Step 2) - Beat with a mixer until smooth. Then add the eggs one by one. Combine the ingredients.
Step 3) - Beat on medium speed for at least 5-6 minutes to get a fluffy, creamy mixture. Now add the orange (or lemon) zest.
Step 4) - Add the sifted flour a little at a time and mix to incorporate.
Step 5) - Wash and chop the strawberries. Add the chopped strawberries to the mixture and mix well.
Step 6) - Pour the mixture into the pan lined with baking paper. Spread the mixture well and level the surface with a spoon.
Step 7) - Bake in a preheated oven at 180°C (350°F) for 50 minutes. Test with a toothpick to ensure it is done.
Step 8) - When baked, the cake will first puff up and then sag a bit. Allow to cool completely before removing from the pan. Dust the cake with powdered sugar. The Mascarpone Strawberry Cake is ready, delicate and flavorful.

Variations
Flavoring
- CITRUS ZEST: To flavor the creamy cake with mascarpone and strawberries, I chose orange zest. Of course, lemon zest or a mixture of the two would also work well.
- VANILLA: You can also opt for vanilla extract for a sweeter taste.
- MINT: or even some chopped mint leaves.
- LIQUOR: If you like, and the cake is not intended for children, you can flavor it with a little rum or limoncello.
Decoration
For decoration, I chose a simple dusting of powdered sugar. But you can do something more elaborate, but also more beautiful.
- CHOCOLATE: you can top the strawberry and mascarpone cake with melted dark chocolate
- WHIPPED CREAM: or a few dollops of whipped cream.
- STRAWBERRIES: You can also decorate the surface with fresh strawberries arranged as you like. Remember to do this just before serving the cake. The juice from the strawberries may wet the surface too much.
Substitutions
Not just strawberries. You can substitute strawberries with other fruits, depending on your taste or the season.
- PEACHES: In midsummer, this cake is great with sweet, well-ripened peaches, for example.
- BERRIES: Or you can use raspberries, blueberries, blackberries.
- CHOCOLATE CHIPS: Finally, for an even more delicious taste, you can add chocolate chips to the fruit.
