- 20 medium strawberries
- 200 g (7 oz) of dark chocolate, 70 % cocoa. You can also use white chocolate if you like. In this case divide the amount in half, 100 g dark chocolate and 100 g white chocolate.

Instructions
Step 1) - To make chocolate covered strawberries, start by thoroughly washing these sweet fruits. Quickly wash them one by one under a gentle stream of cold water. Then dry them carefully with paper towels.
Note: The strawberries must be well dried to allow the chocolate to stick well to the surface of the fruit.
Step 2) - Now chop all the chocolate. It does not have to be very fine, but in small pieces it will melt faster. Place half of the chopped chocolate in a double boiler to melt. Once melted, remove from heat and add the other half of the chopped chocolate to the dissolved one. Continue stirring until the chocolate reaches a temperature of 31-32°C (89°F).
Step 3) - Next take the strawberries and dip them into the melted chocolate one at a time, holding them by the stem. You must reach just below the leaves so that a red portion remains uncovered. Gently place the covered strawberries on a wire rack to cool and set.
Note: If the temperature outside is high -- or to speed up the process -- you can place the strawberries in the refrigerator to solidify. About 15 minutes will do the trick.
Step 4) - When the chocolate is hard and crisp around the strawberries, place the them on a serving platter and serve.

Storage
