A delicate dessert with the flavors and aromas of spring, Strawberry Mascarpone Cake is fragrant and delicious. This is a quick and easy strawberry cake recipe. It does not require butter or baking powder. The baked mascarpone is what makes this recipe special. With its characteristic texture, it makes the dessert delicate and creamy.Because of the small amount of flour in the dough, the texture is somewhere between a cake and a pudding.
Place the mascarpone in a bowl. Mix it with a spatula to soften it a little. Then add the sugar.
Beat with a mixer until smooth. Then add the eggs one by one. Combine the ingredients.
Beat on medium speed for at least 5-6 minutes to get a fluffy, creamy mixture. Now add the orange (or lemon) zest.
Add the sifted flour a little at a time and mix to incorporate.
Wash and chop the strawberries. Add the chopped strawberries to the mixture and mix well.
Pour the mixture into the pan lined with baking paper. Spread the mixture well and level the surface with a spoon.
Bake in a preheated oven at 180°C (350°F) for 50 minutes. Test with a toothpick to ensure it is done.
When baked, the cake will first puff up and then sag a bit. Allow to cool completely before removing from the pan. Dust the cake with powdered sugar. The Mascarpone Strawberry Cake is ready, delicate and flavorful.
