Basic Tomato Sauce Recipe is simple, tasty and easy to make. You can use it for seasoning pasta or in addition to other ingredients, in recipes such as Eggplant Parmigiana or deviled eggs, for example.
Basic Tomato Sauce recipe needs, has main ingredient, red ripe tomatoes, such as perino tomatoes (San Marzano type), pizzutello, datterino, cherry tomatoes or cluster tomatoes. You have to remove their skin and seeds to make a passata, that is a basic sauce made only with crushed tomatoes.
If you have no desire or time to make the tomato passata, you can buy it already made. Usually you can find it on sale in bottles or glass jars. Doing so, you will save at least 20 minutes in the preparation of a basic tomato sauce recipe.
In this recipe we’ll show you how to make a basic tomato sauce with fresh tomatoes from scratch, so let’s start with it!
Basic Tomato Sauce Recipe
- 1 Kg (2lbs 2oz) – very ripe red tomatoes (San Marzano, cherry or cluster tomatoes)
- 2 or 3 tablespoons of extra virgin olive oil
- 1 small onion or shallot
- 1 garlic clove
- 5/6 basil leaves
- 1 teaspoon of sugar
First of all, you’ll need the tomato passata (1 – 2- 3). You can make it following our tomato passata recipe or buy it already made. Whatever your choice, remember that the Italian recipe for tomato passata is made only with tomatoes and, if necessary, a little water. Here are some ready-made tomato passata that we found excellent for pasta sauce or pizza.
So now let’s start. Cut the onion finely (4). Put 2 or 3 tablespoons of extra virgin olive oil in a saucepan and add the onion (5). Simmer for about 2-3 minutes or until the onion becomes glossy and transparent (6). In place of the onion you can use a clove of garlic, or use both ingredients. Just take care to remove the garlic before serving.
Add the tomato passata (7). Stir and season with salt (8). Then add 1 teaspoon of sugar (9), which is necessary to lower the acidity of the tomatoes. If the tomatoes are already sweet you can decide to not use it.
Cover with the lid and let it cook. When we make tomato sauce we usually use a saucepan with a special lid (10). Through the glass lid you can follow the cooking and gradually add seasonings and spices. You can also stir without the lid off and without make it dirty all over. And that’s a bonus.
Cook over medium heat for about 30 minutes, stirring occasionally. When the sauce is ready (11), turn off the heat and add the basil leaves (12). This is the basic tomato sauce recipe, so you do not need to add other ingredients. However, during cooking you could add capers or olives or other spices, which definetly give a different taste to our classic tomato sauce.
