INGREDIENTS

Calamari dry white wine garlic chopped parsley bread  eggs grated Parmigiano  tomatoes Extra virgin olive oil salt 

How to Make It

You need to clean the calamari before you start cooking them. You can buy them already clean, ask the fishmonger to clean them for you or clean them yourself.

Separate the tentacles from the body. Chop the tentacles and cook them over medium heat with extra virgin olive oil, the garlic and a pinch of salt for 3 minutes. Add the white wine and let it evaporate. Set aside.

Remove the garlic and chop it. Mix it with 1 tablespoon of parsley and the bread softened in some water. Add these ingredients to the calamari in the frying pan.

Cook for about 5 minutes on medium heat, stirring well. Let it cool down a bit then transfer to a bowl. Add the egg and Parmigiano cheese. Stir to mix the ingredients. The filling is ready. Now we have to stuff the Calamari tubes.

Fill the calamari tubes 3/4 of the way with a teaspoon. Close the stuffed squid tubes with some toothpicks and set them aside.

Cook stuffed calamari for about 5 minutes on medium heat. Then add the white wine and let evaporate. Wash the tomatoes and cut them.

Now add chopped tomatoes, chopped parsley and a pinch of fine salt. Cook covered with a lid over low heat for about 30 minutes. Gently flip them two or three times during cooking. When calamari are cooked, remove the toothpicks and serve!
