Beat the egg yolks and sugar with an electric mixer on high speed for about 5 minutes until soft and fluffy.

Meanwhile, pour the milk in a saucepan and bring it almost to a boil. Cook for about 5 minutes.

Place the egg and sugar fluffy cream in a saucepan. Slowly add the hot milk and mix. Add vanilla and cook for another 5 minutes.

Turn off the heat, add the cold heavy cream and mix well.

Pour the mixture into an ice cream maker and turn it on. It will take about 40 minutes, depending on the model of the machine. The gelato is ready!
