Wash the basil leaves under cold water. Then place them in a large bowl with plenty of ice for 3-4 minutes.

Dry the leaves well on a kitchen towel. Place them in a food processor with the garlic, pine nuts and grated Parmigiano cheese.

Coarsely chop the ingredients for a few seconds. Then add the salt and pecorino. Finally, add the oil and blend on a pulse for about 5 minutes until you have a creamy green basil pesto.

The basil pesto is ready! Before tossing the pasta, add 1 or 2 tablespoons of the cooking water. This will make a creamy, warm basil pesto!
