How to Make It


Boil the potatoes with their skin on for 20-40 minutes, Then drain and peel them. Mash the potatoes with a potato masher and mix with the flour.

Beat the egg with a fork and add the fine salt. Then add two tablespoons of the beaten egg to the potatoes.


Knead the ingredients with your hands, quickly and briefly and form a ball.


Cut a piece of dough about the size of an orange. Using your hands, roll the dough into a long rope.


Cut the dough roll every 2 cm (about 1 inch) to make small cylinders. Set aside on a lightly floured surface.  Slide the gnocchi onto a gnocchi board or fork.


Cook the gnocchi in plenty of salted boiling water. Drain when they rise to the surface. 

Serve gnocchi topped with a butter, sage and parmigiano sauce.
