Tagliatelle with Asparagus Sauce and Shrimp is a delicious and tasty main dish, suitable in these days of spring when you can find fresh asparagus at the market. In this recipe I’ll use tagliatelle pasta but you can replace them with spaghetti, pappardelle, penne, tagliolini (what you like), even homemade fresh eggs pasta. Follow my recipe and you’ll have a really delicious first dish, excellent for special occasions!
Tagliatelle with Asparagus Sauce and Shrimp Recipe
- 320g (11,2oz) tagliatelle
- 250g (8,8oz) shrimp already shelled
- 500g (17,6oz) asparagus
- the juice of 1 orange
- 1 clove of garlic
- 20g (0,7oz) shallot or onion
- 1 cup of vegetable stock
- extra virgin olive oil
- salt and pepper
Wash and cut the asparagus, removing the white section, which is the hardest. Cut the asparagus tips and set them aside.
In a pan, cook the shallot in 3 tablespoons of oil (I usually use the shallot because I find that it has a more delicate taste and it’s easy to digest, but it’s good enough onion) for 1 minute. Add the stems of asparagus, sliced into small pieces (1). Stir and cook for 1-2 minute. Gradually add 1-2 tablespoons of vegetable stock and cook the asparagus, on a low heat, for ten minutes (2). Season with salt if necessary. Once cooked, place them in a mixer for a few minutes. The asparagus sauce should not be too liquid; cook it a little longer, to curdle the sauce, only if required (3).
Meanwhile in another pan brown the garlic. Slightly tilt the pan, so that the garlic cooks evenly (4). Add the asparagus tips and cook for 5-8 minutes, adding a spoonful of stock, if necessary. Squeeze 1 orange and, if the shrimp are very large, cut them into smaller pieces. Remove the garlic and add the shrimp (5). Stir and cook for 1 minute. Add the orange juice and cook for 2 minutes, over high heat (6). Add salt and pepper to taste.
Cook the noodles in salted boiling water for the time indicated on the package (7). Place in the center of a plate a spoonful of asparagus sauce (8). When the noodles are cooked, place a bit of pasta over the asparagus sauce. Complete the dish by adding the asparagus tips and shrimp sauce on top and serve (9).
