The cups are made with chocolate cookies and filled with a delicious mascarpone cream flavored with coffee. This dessert is an excellent alternative to the more famous Tiramisu, but in this recipe mascarpone cream is without eggs, with the addition of coffee.

Ingredients

  • 400 g (14 oz) – chocolate cookies
  • 150 g (5 oz) – butter
  • 250 g (9 oz) – Mascarpone
  • 1,5 dl – heavy cream
  • 150 g (5 oz) – icing sugar
  • 1 – small cup of coffee
  • unsweetened cocoa powder
  • salt
  • few raspberries for decoration

Melt the butter in a double boiler (1). Blend the chocolate cookies in a food processor with the melted butter (2), until mixture is smooth (3).

Put the mixture into a bowl and let it rest in the refrigerator for 1/2 hour, so that it would be easier to mold (4). Meanwhile, cover the inside of the bowls with cling film, whether silicone or steel (5). Then put the mixture into the bowls in equal parts and form a layer of about 1 cm, making sure it adheres (6). Now put the Chocolate Cookie Cups in the refrigerator for 2 hours / 2 and a half.

Coffee Mascarpone Cream

Place in a bowl mascarpone, icing sugar, a pinch of salt and cold coffee (7). Mix and work the ingredients until you have a smooth and soft cream. If you’re lazy like me, put everything into a blender and blend all the ingredients for 4/5 minutes (8-9).

Whip the heavy cream (10) and add it little by little to the mascarpone cream (11), stirring gently, with a movement from the bottom upwards (12).

Cover the Coffee Mascarpone Cream with cling film and place it into the refrigerator to rest (13). When it’s time to serve this delicious dessert, gently remove the cling film, fill the Chocolate Cookie Cups with Coffee Mascarpone Cream (14), sprinkle with cocoa, then decorate with raspberries (15).
